While all the three Institutes mentioned (Sastra, Amrita and HITS) are good colleges for chemical engineering, if we consider several aspects like educational facilities, peer group, campus life and most importantly placements, I would suggest you join Sastra University.
Moreover, Sastra University is known for its research in chemical engineering and there are some of the core companies that comes for recruiting chemical engineering students with average salary of about 9LPA.

Amrita Vishwa Vidyapeetham reserves around 25 percent of the total seats in each course at every branch for the slab 1. The marks required for getting a slab 1 seat with scholarship for each of them will be different based upon the demand and popularity among candidates. For example the marks required to get computer science and engineering at Coimbatore or Amritapuri campus will be way higher than getting Mechanical engineering at Amravati campus. You can get a better idea by comparing the cut off ranks required to get a desired seat and analysing what rank will be sufficient to make you part of that upper cream layer. Amrita Vishwa Vidyapeetham announces the rank list of appeared candidates for all shifts using a proper moderation policy formed by the institution. No ranks or marks is released shift wise and there is a general ranking system for all.
Amrita Vishwa Vidyapeetham still gives it's candidate an option to apply under State quota (if a local of that particular state) or in general quota. See, it would not be possible to get CSE with the mentioned rank at Coimbatore campus under open quota as it most common choice of AEEE aspirants and has tough competition. As of ECE, the chances are slim as the previous closing ranks are close to 3000 but it is expected to shoot up considering the tough competition and tie ups in various ranks.
Your chances at Amritapuri campus are much better as there is comparatively less hustle. You will surely get a seat in ECE or either of the different CSE programs. This campus is almost at par with the main campus for engineering due to excellent faculty members and highly active placement cells and chapters. It only fall backs in terms of area and infrastructure in comparison but you will get equal opportunities. You might not know in the nirf engineering rankings, it is the Amritapuri campus which has been mentioned although Coimbatore campus is the oldest campus.
It is great that you can avail the benifits under state quota as it would boost your chances to a far extent. It is though very difficult to predict the cutoff marks as Amrita Vishwa Vidyapeetham does not releases any details regarding the same. But analysing the p ast trends and reviews of appeared candidates, you should try to score atleast 120 marks so that your rank ranges between 2.5-3k which should be sufficient to fetch you computer and communication engineering at Coimbatore campus.
