Sociology involves the study of society and social behaviour of human while antropology on the other hand not only deals with social aspect of human but even their biological aspect.
Choosing sociology will help you a lot as an optional in UPSC because of the similarity in the sociology syllabus as well as general studies syllabus,this will also help in general studies paper four in case of ethics, this subject is comparatively easy to understand especially for humanities students .On the other hand, Anthropology has comparatively shorted syllabus, as this includes social as well as biological aspects og human, so science is involved here.
You should choose the subject based on your interest, when it comes to availability of study materials, both Anthropology as well as Sociology have been taken up by previous qualified candidates, so there's no dearth of study materials, nowdays preparation for UPSC isn't just limited to printed books, one needs to use the Internet extensively as well regarding this matter.
The question of a subject being easy depends on you, anthropology as a subject includes study of social as well as biological aspect of human so there's science involved here unlike in case of sociology which focuses to a large extent on the impact of society on humans/congreration, how does it influence their behavior etc.
It doesn't matter. You are free to choose anyone you like. Whether it is Sociology or anthropology, you can choose anything.
But as you have asked that which will be more beneficial then i would suggest you to go for Anthropology. I am saying this because i have seen various example out there that how Mains optional Paper can be a King maker or a destroyer.
In anthropology questions are sometimes repeated, there is no new concept coming day by day, you will have to just mug up everything.

There is no syllabus per se for B.Sc PU CET entrance exam. You will be tested on your knowledge in Physics, Chemistry and Biology/Mathematics at 10+2 level. Each subject will have 60 questions. Every right answer gets you 2 marks and a wrong answer takes away 0.25 marks in the form of negative marking. So you have to prepare based on your 12th NCERT books. Unfortunately we couldn't get hold of previous papers for you. Sorry about that.

Paper-I Mathematics - 60 Qs - 120 marks - 70 minutes
Paper-II Chemistry -60 Qs - 120 marks - 70 minutes
Paper-III Physics -60 Qs - 120 marks - 70 minutes
Paper-IV Biology- 60 Qs - 120 marks - 70 minutes
For every wrong answer, 25% marks allotted to the question will be deducted.
The medium of examination shall be ENGLISH only.

A: Social Studies and General Awareness;
Part B: Language and Comprehension
Part C: Reasoning Ability; and
Part D: Quantitative Aptitude.

its natural to get worry about the future , because we dont know how long the corona pandemic will last, see msc and law are the two different subjects and if you are interested for msc you should go for it, for msc subjects microbiology or biotechnology is best as per research scope. mean while I think you should develop your soft skills and other documentation, presentation making skills , so that you can achieve a official position in any sector. also there is many home based tutorial jobs available where you can teach students from comfort of your home.
