Yes definitely! Even if you are not an Arts/Humanities student in your high school, you can still opt for BA English Hons and become an English Professor.
All you have to do is go for BA Eng Hons from a good college, if they have a 4-year program, enroll in it because according to UGC's new guideline, you can appear for UGC NET (a centralized qualifying exam that you need to clear to become an Asst Prof.) in your last year of BA, but only if you have a 4-year graduation degree. Clear your UGC NET and start your PhD and alongside that, become an Asst Prof. The average passing percentage required for a General category student to pass UGC NET is 60%, and if you are aiming for JRF (Junior Research Fellowship) then score above 65% to be on the safer side.

If you are planning to pursue BSc in Economics from college other than DU, then you won't face any issue as other colleges don't have the eligibility criteria to have maths as a subject in class 12th but if you are planning to pursue from Delhi University or colleges under Delhi University, then you won't be eligible as they have mathematics as a compulsory subject for admission

CUET PG which stands for Common University Enteance Exam- Post Graduate, is an entrance exam for post graduate or masters degree programs. You can give this exam only after pursuing your bachelor's degree or in your third year of bachelor's. Since you are still in class 11th, I recommend you to enjoy your school life and upcoming college life and start preparation for CUET PG in your 2nd year of college.

The registration for your subjects in 12th is completed in 11th class and you must stick by it. You are not allowed to change your subjects after registration.
So unfortunately you can not change your subject and have to study what you selected at the time of registration.
