It should not occur like that but as you mentioned that your EWS category is not included then I think there maybe something wrong with your EWS certificate. This could occur if your EWS certificate is expired and it is not valid anymore. I think you should try contacting the authorities and ask if there is any solution. Hopefully you will get some aid.

Getting admission into any IIT is based on multiple parameters like seat availability at the college, exam difficulty level, no. of applicants appeared and applied, previous years cutoff trends, etc
So, particularly, based on the above mentioned factors which are not constant and change almost every year, it's difficult to say whether you can get admission into CSE branch in IIT BHU .
Also, EWS reservation seat availability is dependent on how many candidates apply for it and the no. of EWS seats in a particular IIT. If no. of students applied for EWS is greater, then the cutoff would be high an if less students have applied for EWS, then cutoff would be low.
And, CSE branch cutoffs are usually very high, so you would definitely need a good rank to get CSE branch in any of the IITs.

As per your saying you are getting seat in ECE in MNNIT Allahabad then first of all congratulation.Now if your EWS rank id far than the closing rank of ECE then you can do not worry you will definitely get the seat because the counselling always gives the best chances to the student.This condition can happen as only few seats are reserved for EWS candidate but if your CRL is better to get the seat then you will definitely get the seat,

No you can't use general category. You have to provide approved documents to claim all the details you have filled in your application form. If you fail to do so then your form will get rejected and further process will get freezed.
For this reason , it is advised to fill details accurately and correction window is provided so that candidates can make ammendments.
There is good enough time for document verification time. Go to lokseva kendra of your locality and make EWS category certificate and make it ready before the deadline.

As we know that IIT Delhi has released the qualifying cut-off marks and percentage for JEE-Advance 2020. So according to the notification of IIT Delhi an EWS category aspirant should have minimum 5 marks or 4.5% marks in each subject and total aggregate should be minimum 62 marks or 15.75%.
