You need to mention which IIT you are talking about as there are many IITs and each have a different closing rank or cut off score. But if the cut off is 500 and you have scored 515 then you have high chances of getting a call. It differs each year depending on the general merit of the students applying.

With 593 as gate score there is very less chance to get seat in geo technical and water resources in IIT BOMBAY as previous year cutoff for geo technical is 650 and for water resources is 620.

Yes you can teach Civil Engineering after doing your Mtech but the catch is that you can't teach in IIT's or the top NIT's.
For teaching in IIT's one must need a Phd degree that too mostly from abroad.
You can try For other colleges but they also want an Mtech from atleast NIT's.

Geoinformatics and natural resources is an emerging branch and it has very wide range of scope in research field but the thing is if you have proper interest in this field only then opt for this.
Because don't select this branch just because it is IIT Bombay. Ultimately you have do masters in this field because doing only bachelor's won't be feasible.
The placements are good and the opportunities such doing internships in abroad are quite good. You can also get direct admission in some good colleges just on the basis of your cg score in IIT Bombay.

As an overall, placements in core branches like civil engineering faces the same plight everywhere when compared to other branches like CSE and circuital branches.
IITs are better in this, as many of the professors have tie-ups with the civil engineering firms or with industry giants so placements are guaranteed somehow. And IITB being one of the best institutes in India with highly qualified professors and a really good infrastructure, you needn’t worry about the placements.
According to 2017-18 placement statistics, out of 19 students applying for M.Tech placements, 18 have been placed from the Geoinformatics department of IIT-B.
Also, Geoinformatics being a comparatively new field you can do a lot of research work in this area which is a good point to your advantage and IITB has the best labs and faculties for that.
Under this department also comes the ISRO-IIT(B) Space Technology Cell which performs research in several fields related Space Research Programme of ISRO. Several projects are given to the faculty of IIT, Bombay. The Cell is also supporting Continuing Educational Programme, Seminars, workshops and conferences from which you can learn a lot.
NITs too have tie-ups with industries and consultants to regional companies as well. From all NITs, NIT Trichy has almost 100 % placement for many civil branches following it is NIT Surathkal and then NIT Warrangal and NIT Calicut.
These are some of the placement data of previous years from NIT Calicut in Transportation:
For the year 2017-2018, out of 13 students, 4 students got placed. Overall 30% placement from the specialisation.
For the year 2016-2017, out of 18 students, 7 students got placed. Overall 38% placement from the specialisation.
For the year 2015-2016, out of 17 students, 3 students got placed. Overall 17% placement from the specialisation.
For the year 2014-2015, out of 14 students, 2 students got placed. Overall 14% placement from the specialisation. For the year 2013-2014, out of 14 students, 3 students got placed. Overall 21% placement.

HiiAs per the previous year cutoff of IIT BOMBAY, to get admission into Geoinformatics and natural resourse engineering, you need minimum 360 in CE/AR/AG or 315 in MN/GG/MA/PH or 450 in CS/EC/EE in OBC category.SO since you have scored 515 in Civil and you belong to OBC, you have higher chances of getting Geoinformatics in IIT Bombay, but no confirmation can be given as the cutoffs are yet to be released.
