As you said you are from Gujarat but you have domicile of Maharashtra, then below I am enlisting some eligibility criteria, if you fulfill that then you are eligible to sit in GUJCET even if you have domicile of Maharashtra.
If a candidate has passed Class 12 exam from a school situated in Gujarat then he is eligible for GUJCET
or
If parents of the candidate is from from Gujarat or currently working in Gujarat at the time of admission then the candidate is eligible to sit for GUJCET.

Student is eligible for state quota who is the domicile of the respective state for which he has been leaving permanently eligible for avail of 85% state quota privileges.
If you are domicile of Gujarat from where you have been completed your class 10 exam then you will be eligible for only the state of Gujarat for 85% state quota privileges.This is not a factor whether you have passed class 10 from Gujarat and passed 12th class from Rajasthan.if you are are domicile the state of Gujarat then you will be eligible for avail of the opportunities of 85% State quota for admission in NEET UG. Now if you are from the state of Gujarat then you will avail of the opportunity of 85% state quota of Gujarat only.

Sorry to say but this can't bee predicted in advance. Whether to give grace marks to students or not is completely decided by the board authorities. If they find the paper difficult you may get grace marks.
But I will suggest you instead of wasting your time in thinking about the grace marks target for passing marks. Then you won't have to be stressed about this. Work hard and try to score good.

While calculating your percentage you need to consider both theory + practical.
Now,
Your theory is of 100 marks and practical is of 50 marks so your percentage will be calculated out of 150 marks.
As per Aiims eligibility criteria,
to be eligible you must be either appearing for 12th board examination or should have passed 12th board examination with physics, chemistry ,biology and English and must have got:-
at least 60 % in aggregate of PCB and English in 12th examination if belongs to general /obc category
at least 50% in aggregate of PCB and English if belongs to st/Obc/ Sc
at least 45 % in aggregate of PCB and English in case of general pwd candidates to be eligible.
Also,
* to be eligible for Aiims 2021 one has to be at least 17 years by 31st December 2021
So, if you fulfill these criteria then you are eligible for AIIMS and after qualifying Neet examination you can get admission in AIIMS on the basis of rank obtained by you in NEET

To get admission in AIIMS , as you mentioned candidate must have atleast 60% in physics, chemistry, biology and english as compulsory subjects in 12th from a recognized board. This will include pverall marks means both theory and practical marks. So, calculate the percentage you have scored out of 150 in the subjects.

The eligibility criteria for NEET 2021 is
If you are general candidate then you need to score 150/300 in combining PCB marks in class 12. since, you have secured more than minimum required marks so you can give NEET 2021.
But, to get admission in AIIMS you need to fulfill the eligibility criteria of AIIMS. If you are general or OBC candidate then to get admission in AIIMS you need to have minimum 60% marks in aggregate in class 12. But, if you are SC/ST candidate then the minimum marks required will be 50%.
