Before you start tackling hc verma, make sure you understand the basics from your ncert books. I will solely recommend NCERT books for topics. First, read and answer the questions.
You can begin solving hc verma questions after finishing the ncert books for class 11th and 12th.
This method can also help you to score good marks in JEE mains also.

See NCERT text books are sufficient for concept learning in Chemistry and honestly speaking NCERT textbook is sufficient for organic chemistry only till JEE-Main and if you want to appear for JEE-Advance then you need to go for some reference books as well so I am enlisting down some best books for preparation of JEE-Main apart from NCERT textbooks, note that NCERT textbooks are must have books for preparation of JEE :-

Yes , NCERT of class 11 and 12 chemistry is enough to score 80% marks in JEE Mains organic chemistry section which is a very good score , but you will have to complete each and every thing and supplement it with previous year question papers .
If you have time then you can refer to other books such as OP tondon or JD LEE.

The straight answer is NO. there are various topics and concepts that needs to be prepared for JEE advance examination. See, NCERT makes the foundation of this examination but the question asked are not straight forward also some topics are quite hard which are not available in ncert syllabus.
You need to prepare from side books as well. Alsp, I would suggest you to kjdnly practise a lot of question because time limit along with difficulty of question makes it very hard to qualify this exam.
Mostly all the concepts, theory and formulae are there in MCERT books but you need to prepare from side books as well for deep understanding of concepts.

No , You should not skip the whole NCERT book of Physics, Chemistry and Maths for JEE Mains as they are the basic books which help you clear your concept in a very easy way plus they contain hundreds of questions for your practice and sometimes you will find NCERTs question in JEE Mains .
If you have having some problem in some topics/chapter even then you should have a look of the chapter from NCERT .
