see HC verma for Physics and DC pandey are a must do books for the jee aspirant, you have to make sure that you are solving all the type of questions so that you can be well prepared for the jee mains paper.
now, it completely depends on what type of coaching are you in i.e. the questions in your coaching manual meets the level of the HCV or not, contact your coaching teachers, ask them about the level of the questions in the manual , also. if the level of questions are good in the manual then you will easily be anle to solve all the questions from the hcv type books,
get a quick revision from the book, see that whether you can solve it or not.
if you are able to do so, then the exemplar and the coaching materials are enough, else you have to prepare from these books as well.

NCERT text books forms the base of NEET preparation, but the approach is different for each subject:-
BIOLOGY- Biology NCERT text books are considered as Bible for NEET. 85-90% questions are based entirely on NCERT. So, it is advised to be thorough with text books (diagrams too!)
CHEM- Inorganic and Organic chemistry are mostly based on NCERT text books. You should go through each reaction mentioned in organic section. For physical chem, it will be required in theoretical questions only. If you know the way to approach problems, you can skip it.
PHY- approach for physics is similar to physical chemistry. you can read it once to understand the concept. It helps to solve AIIMS type of questions which use concepts. You should definitely go for other books for MCQ practice.
alongside, solve previous years questions to get an idea of the types of questions asked.

The text book of maharashtra state board exam are little different from the NCERT books in terms of syllabus. For board exam you should prepare from the board text book or any other good notes available.
As you mentioned that your focusing to clear NEET exam. Than to carck NEET exam NCERT books are first choice to read. You can refer ncerts and 1-2 objective questions book for each subject to clear neet exam.
If you prepare and practice for neet exam it will also help you in mh- cet exam PCB group. So by preparing neet exam you will automatically get prepared for mh cet exam.
So for board studies you should refer the text book or any good notes available to you. And for mh cet and NEET you should refer ncerts and some objective books.

JEE Mains is one of the most reputed engineering entrance examinations. There are no limitations or defined steps to get 210 or more marks in the exam.
But, I agree that doing Chemistry NCERT, HC Verma, Cengage Books, and 14 years of question papers will be enough to build confidence. So, I will suggest you do as hard practice and revision you can do, and don't stop till the exam.

Yes , There is a paragraph containing description about a scientist generally in the beginning of every chapter in biology NCERT . It contains its biography , his discoveries and whatever he has done to mankind and much more .
In NEET there are very less chances , that they will ask some question from that paragraph , but sometimes 1 question came like this : Who is father of Genetics ? , Discoverer etc . So you must read this paragraph at least one time .
They will not ask these type of questions everytime , but still it has some chances to came in exam .
