Your question is not clear, please elaborate it. Furthermore, I can give you all required informations about the counselling round. NCHMCT has realeased the schedule for NCHM JEE 2020, you can register online from September 8 to 14, 2020. It will be conducted in two rounds.
Candidates will be fill their choices and lock them via online mode. Choice modification can be made again for round two. You can get further informations on the link provided below:

As per general catogery,here iam considering, you belongs to general category you will get seat in SIHM Gangtok (state government).the college's varies with the catogery,rank .if you belongs to SC category you will get seat in SIHM dehradoon (state government)

With your 12479 rank, if you belong to OBC Category you can get seat.
For general, you have no chance.

IHM Pusa situated at Delhi is a vailable for you to apply with your present score, since the cut off for SC category is around 5500 as of 2019. You are also eligible to apply in any of the IHM colleges of the country with your present score under the category you have mentioned. Last year closing cutoff for IHM Lucknow - Institute of Hotel Management, Catering & Nutrition in B.Sc. in Hospitality and Hotel Administration is 5309.
Your rank is very nearer to it. So, there might be chance that you will get IHM Lucknow.

Performance depends on how a student understand, learn and remember concepts. to be able to solve questions in entrance , a student have to solve questions which will sharpen the concepts to a deeper level. There are many tricks and formula.
They join coaching classes from +2 1st year and start learning along with academic. it will give enough time to practice. you will be able to cover every chapter in a ease state and you will have teacher/guide to help you out if you get stuck anywhere.
some start in +2 2nd year and take one year course. They cover both year course in one year and prepare for it. if they have good memory then they will able to crack entrance exam.
for any college option like government or private, few months preparation will do.
so it depends on you what is your goal. if you want to join top college then it would be better option to start preparation from 1st year of intermediate. you can practice along with the academic. get prescribed books and read them line by line.
Study very well. if you take rest and become irregular then you will forget everything and you have to start again. so it is a long term continuous effort.
