For MBBS seat in government college, general category candidates requires around 580-600+ marks in NEET. With the score you have mentioned above it can be difficult for you to get admission in government college. You can still try in Subsequent or mop up rounds since in Karnataka there are colleges with low cut off. You should apply through state quota since according to state councelling 85% seats will be for state quota students. You can try in semi government or private colleges, there you might get admission easily. I am providing list of colleges you might get admission in, check them out :

Yes there are management quota seats for veterinary sciences in Karnataka.
A Bachelor of Veterinary Science programme in the field of medical science deals with the treatment of animals, commonly known as veterinary science. The duration of the programme is five years and six months.
There are around 47 veterinary colleges in India out of which only 3-4 are privately owned and rest are government. 15% seats of both private and government colleges is filled through management quota the fees of which can be anywhere from 6 to 8 lakhs. 85% of the remaining seats is filled on the basis of NEET result (merit based). Their fees of which is comparatively lower.

As you got admission in management quota as you wished, then there should be no problems. As you haven't mentioned where you did the the mistake, it is not possible to interpret the best solution, but you will be considered in management quota only, as there is much difference in admission procedure of regular candidate and management candidate.
With management quota, one needs to pay certain donation amount depending on the branch they want to study. Additionally, they also needs to pay the college fees like regular students. They have only got relaxation from entrance test procedures.

As you are re-appearing for your class 12th from Delhi school, but the duration of the class is only one year. Atleast two to three years stay with And completing senior secondary school in Delhi is required to satisfy the criteria for benifits.
In general, you will not get Delhi Home State quota relaxatations.
