As per your NEET score is 560 that means your all India rank should be somewhere in between 19967-23501. You do have high chances of getting BAMS and BHU seats. 560 is a very good score to secure a seat a good government college.

According to last year NEET UG cutoff database , with 427 marks .. you have less chances to get any Govt medical college for MBBS/BDS degree in Uttar Pradesh in UP state quota .
The min cut off marks was 457 in sc category approved by Autonomous State Medical College and Associated Teaching Hospital, Bahraich
Well, the cut off can change every year due to some factors like seat capacity, difficulty level of questions that's why the above predictions can't give 100% accuracy .

NEET 2020 cut off marks for OBC category Through Uttar Pradesh state counselling was 605 marks and Air 17483 in GMC Bhairach.
While in 2019 cut of for OBC was 576 marks and Air 15259 in GMC, Bhairach.
So if we see last two years cut off trends you are not anywhere near to that. So there is very tough to get you govt mbbs colleges through up state counselling or AIQ also.
Although you may get govt BAMS/BHMS vertinary college's in both AIQ and state quota counselling.
