Some of the recommended books for NCHMCT JEE Hotel Management are as follows;
For English section, when it comes to the grammar part you can refer Wren and Martin, and for practice purpose you can use Arihant's Publication General English for all competitive exams.
For Reasoning and Logical Deduction, you can go through RK Agarwal's Verbal and Non Verbal Reasoning.
For General Awareness and Current Affiars, you can refer newspaper for covering dynamic portion or monthly magazines like pratiyogita darpan also helps, you can refer GK Today or Lucent's GK for static portion.
And for service sector aptitude, you can refer to any of the book for hotel management by RK Gupta or Arihant Publication.
