The potential energy of an electrical dipole is given by the the vector dot product of the dipole moment multiplied with the electric field.
In stable equilibrium of electric dipole, the angle between the electric field and the dipole moment is equal to zero degree, where as in unstable equilibrium the angle between the two vector components gets changed to 180 degrees.
