No it is not mandatory for you to give improvement in all the five subjects if you are planning to appear in JEE Main 2018. In case you have not been able to score the requisite marks to be eligible to appear for JEE Main, then you can give improvement in the subjects in which you have scored less and ensure that you meet the required marks. If you want to score just 75% marks so that you can appear for the JEE Main 2018 entrance exam, then you may just write improvement in those papers where you have scored less. However, if you want to get into the top 20 percentile then you will have to appear in all the subjects for improvement.
