Most of the experts are saying that selecting college is more important than selecting courses ......my doubt is whether we can take ANY courses like ceramic ,petroleum, leather etc.....to study in anna university O or any other THE BEST college .....?????

It is also a matter of fact. But if you are not interested in that course then what is the use of studying that course. You should get the course what you like or else go for another college. If you can study any course that's your wish. You should have vision on your career so that you can gain good carrer.
