Yield in culinary term refers to how much you will have of a finished or processed product . Y ield can also refer to the amount of usable product after it has been processed (peeled, cooked, butchered ). For example you may be preparing a carrot soup. The soup requires 1kg of carrot which purchased and bought. However once you peeled it and removed its top you have only 800 of carrots left. In order to do accurate costing , yield test must be carried out on all recipe and ingredients.
