The state of unsaturated fat at room temperature is liquid. It occurs in the state of liquid at room temperature. This is because unsaturated fats have double or triple bond in their fatty acid chain structure. Hydrogen cannot saturate the 2 carbon atoms containing double or triple binds between them. This makes the entire molecular structure weaker. Thus the liquid state. Hope that helps.
