Greetings,
You are eligible to apply through the SCB channel by appearing for the IISER Aptitude Test (IAT)but not through the KVPY SB channel which is for students in the first year of their undergraduate science courses, however you can apply through the SX channel (for 12th students) for science courses like (B.Sc., B.Stat, etc.)
You will have to attain the minimum cut off marks to be called for further processing. I am attaching a few links for more information on this:

The Application Form for Kishore Vaigyanik Protsahan Yojana (KVPY) Exam 2021, will be available from Second Week of July, 2021. The Exam will be by First Week of November, 2021. You can apply via their Official Website. I have pinned their Official Website below:

Delhi University Admission 2021 will start in the month of March 2021. An entrance exam known as DUET is organised by NTA (National Testing Agency) to offer admission in various UG and PG programmes in the University.
Application form will be available from first week of March 2021 for UG courses (entrance based) and from third week of May 2021 for UG courses (merit based).
Delhi University Syllabus will be released by the authorities through online mode on the website. Syllabus will be different as per the courses.

Yes, you can do that. You can pass the on demand examination from NIOS if you are not staisfoed with your previous result of UP boards. This mode allows you to appear for senior secondary examination after passing your 12th to upgrade your knowledge. But you may not get a transfer and migartion certificate, so you may have to apply separately for that. You must apply in IISER SCB channel using the latest/improved 12th passing certificate and marksheet you have(i.e the NIOS board). So, there is no need to use your UP board result.
The NIOS board is recognised all over India, so you do not need to worry about it.

You have not mentioned that you want to know about common aptitude test , please mention below.
But as per government details it is said that they will be implementing this test for admission but decision is not yet final.
The government decided to implement a single entrance test in accordance with the proposals put forward by the National Education Policy (NEP), 2020
The government is planning to implement a Common Aptitude Test for admission in all central universities including Delhi University (DU), Jawaharlal Nehru University (JNU) and Banaras Hindu University (BHU) starting academic session 2021-2022.
But please wait for the official announcement.

There is no information for University of Delhi conducting entrance examination for the merit based courses. So, till now admission will be as usual done on the basis of percentage scored in class 12 for the merit based courses. But for the latest information, it is recommended to visit the official website of Delhi University.

DUET is conducted to get admission in UG courses such as Btech or BA. But the admission for BSC courses are done on the merit basis. And to be eligible for admission in DU, you need to have atleast 60% in 10+2 mathematics. There is no entrance exam for BSC mathematics honours.

B.Voc is a full time 3 year interior designing course at Rachana Sansad Institute . The admission is based on 12th merit and performance in the aptitude test which this year was scheduled to take place on June . To know the status of the same and about the next entrance date you may have to contact the institute. Regarding the aptitude test B.Voc is an interior designing course so the entrance or the aptitude test will basically test your aesthetic skills or sense to test your observation level, visual analysis and attention note details,logical reasoning,and general aptitude or general knowledge in this area. Apart from this there will be a skill testing section where your drawing skills will be judged.It is to test your visualization , imagination or sense of perspective drawing, creativity, colour sense , scales and proportions , your understanding of shapes etc
