It depends on the region where institute is located to choose medium of imparting knowledge of various subject in bams course.You can choose hindi,English, and other regional language.
Mostly subjects of Ayurveda are in Sanskrit so you must have minimum knowledge of Sanskrit. It will help you in understanding the concept.

If you are a English Medium student, then you have to exclude the subjects of the Languages like Sanskrit, Kannada etc. Except this languages the subjects available in the 1st year PUC for the ARTS stream is provided below:

No , You can not change your medium of reading and writing paper in the middle of class 12 as it it not allowed by any education board in India.A student have to write its class 11 and 12 in same medium so if you wrote your first term exams in Hindi you have to write your final exams in Hindi as well.
You can change it during your graduation as most of the courses In India are taught in English only.
You should not waste your time about thinking about this query go prepare for your boards exam and then if you want to study in English you can do if in your graduation.

Hope you are doing great ! Yes there is english medium available in NVS (navodaya vidyalaya samiti) commonly called navodaya school. If you want to take admission in class 9th there then you have to only upload class6th and 7th result ,they don't ask for 8th result too ,it means you can apply now easily in 8th .Also Don't waste your one year ,start preparing yourself and give your best too.
