Let's clear you a think IIT always IIT. It have own glamour. If you get IIT Bombay in environmental science in my opinion you should take this opportunity. Because every year cut-off marks will change, question paper also change so next year you don't get this good rank so you will regrade for this.
Another think if you are not interested in this subject and you want to another subject and college is not matter you at all then you should avoid this opportunity. And you should take one year drop and prepare your self for better achivement.

The university declares BHU PET cut off 2020 for all categories including General (M and F), General (F), OBC, SC, ST, PWD and EWS. BHU PET 2020 cut off mentions the minimum rank candidates must have secured in PET to qualify in the exam and be considered for admissions into the university for PG courses. The counselling of BHU PET candidates will also be done on the basis of cut off for BHU PET. To get admission in BHU for M.Sc post graduation course is through BHU PET. Based on previous years the cut off for M.Sc Environmental Science would lie in the range of 110-200. As you have 204 rank which is very close rank the chances to get a seat is still very less as there is a lot of competition and tens and hundreds of students within the difference of even one marks.
As far as Non Core/IT/Finance/Consultancy Placements are concerned, both being top IITs provide substantial opportunities with good Pay scales and maximum packages lying between 14-20 LPA.
Core Placements for both your options are Bleak. Last year as far as I remember only 3 Companies lined up for Ocean Engineering Students, ExxonMobil, Indian Register of Shipping and Oceanergy. IIT Bombay Environmental too faces same dearth of Core opportunities.
I would advise you to forgo the top 5 IITs and target the Next 5 IITs. You will surely get either of Chemical/Metallurgical/Industrial at IIT Roorkee, BHU, Hyderabad, Indore and Guwahati.
Another choice can be taking a Core Branch like Mechanical , Petroleum or Chemical at IIT ISM Dhanbad.Core placements at IIT ISM are at an all time high there.
