Actually to be eligible for UPSC civil services examination you need to be at least a graduate ,so it is completed fine with the subjects which you have in your class 11th but to be eligible after your 11th and 12th you need to do graduation and for graduation as well ,you are free to do any course like BA, BCom or any graduation course and then you will be eligible for UPSC civil services.

Your UPSC civil services examination consists of three stages
********prelims exam :- it is objective paper and is of qualifying nature , so you just need to at least qualify it to be eligible for mains examination, the score /marks obtained by you in your prelims examination is not added up or used in your final merit. I suppose you have mentioned the subjects which you have or had selected in your 12th standard. The job which you may get after depends on whether you wish to pursue further studies, that is, graduation in any of the above mentioned subjects or any other course. You may give various competitive exams associated with these subjects or other subjects. After your further studies, you would be exposed to various fields and job opportunities. For example, if you take up English in your graduation and go for B.A(Hons.) English and afterwards you will have the opportunity to go for further higher studies after which you may get a teacher's degree if you wish to go in that field.
