VIT and MIT, Manipal, both are good engineering colleges.
I would suggest give both VITEEE and MU-OET. Then decide the college based on the branch that you would like to opt for.
Both VIT and MIT, Manipal being private colleges have great infrastructure. The placement statistics have been good too with several successful alumni. There are a lot of foreign links at both places as well.
The only difference between them is that MIT, Manipal was established way before VIT. But over the years VIT, has gained the reputation of being one of the best private engineering colleges in India.
To be honest your future relies less on college and more on what you decide to do. Both of these colleges are filled with opportunities for oneself to discover.
Try to visit the campuses and experience the environment for yourself. That'll give more satisfaction. Then choose the college which you feel is more favourable for your development.
