See in Case of NEET you are required to pass the Physics /Chemistry /Biology compulsorily all the subjects and the aggregate must be greater than 50% for PCB. So if you fail in chemistry you are not eligible for NEET.
For Paramedical Courses, the student needs to pass Physics/Chemistry/Biology for most of the specific UG courses, for that also you won't be eligible. Apart from this in Pharmaceuticals as well the chemistry comes under the eligible criteria. So this fields you are ineligible.
But you can take admission in BSc courses which don't requires Chemistry for example, you can take admission in BSc Hons in Physics/BSc in Biology (in most colleges chemistry isn't required)/BSc Hons in Nutrition etc.

To be honest, 80 is an amazing score but it does not guarantee your seat into IITs. For getting into an IIT, you need to score good in JEE mains and advance. Admissions into IITs is only based on that. All the best !

Yes, the 75% eligibility criteria has been removed starting from 2022. So you just need to pass your boards in order to be eligible. But about the admission to IIITD it depends on many other criteria such as -
a) your rank in JEE Main and JEE Advanced.
b) JEE Main examination difficulty level, etc.
