Your score is good.As per the previous years cutoffs you have little chance of getting Applied Mechanics in old IITS as their cutoffs are high around 750.You can also apply for medium ranked IITs such as IIT Patna, IIT Delhi, IIT Bhubaneshwar,etc.So,be hopefull that you will get it
Yes, you can get 100 marks in Physics by reading the following topics. But that would be the best case scenario. And doing this is not advisable.
You can get 100 marks if you get all these questions right and then don't commit any other mistakes that could lead to negative marking.
I suggest you to do questions from all topics (at least the most commonly asked) and revise these topics thoroughly.

General: opening 2060: closing 3192
OBC NCL: opening 762: closing 1250
SC: opening 429: closing 708

It highly depends upon your interest. I am giving an Idea of each branch which may help you in deciding that what branch is better for you-
B.tech Electronics
Electronics branch deals with the study of Electronic circuits, VLSI design, etc.
You would be having great chance in Cellphone industries and PSUs such as ISRO, DRDO, etc.
B.tech Mechanical
In Mechanical you will study Machine designing, Robotics, etc
You would be having good chance in PSUs as Mechanical students have lots of opportunities there.
B.tech Mechatronics
Mechatronics is a field which is originated from the combining of Mechanical and Electronics branch.
Here mostly Robotics is taught. You will learn to manage or create Machines via Electronics knowledge.
Just think about the field which interests you. That will be the best field.

Both of the books are very important but Trueman Elementary is the best it contains all the information and the topics in vast with proper explanation.Objective Trueman should be use during exam for the fast preparation and revision.
Objective books is also important from the exam point of view but other books is important during vast study before exam.
