If you have chosen ewd category then do make sure that you have a valid ews certificate to be uploaded in phase 2 of application form filling process and for counselling process . The 2nd part/ phase needs to be filled before your neet Result or downloading of neet result/score card , NTA will notify separately later on about phase 2 filling.
And,
Yes, you can choose BC- E in your state counselling form and avail reservation because in state counselling categories are there as per the reservation system of that particular state.
For example,
In maharashtra there are different categories like NT1, NT2 etc, and while filling maharashtra state neet counselling, the option of these categories are there.
Now that,
limited time is left for neet 2021 , so you should be focusing on your preparation,

then revising the chapters,
solve at least previous 10 year neet question papers as concept behind the question often gets repeated in the examination so it will be of great help in your preparation ,

Yes, you can change your category using correction window
Neet correction window will open on 8th August and the last date to use it is 12th August.
*Visit neet.nta.nic.in (http://neet.nta.nic.in/)
When you change your category, from a category for which application fee is less to a category for which application fee is more . Then you have to pay the extra amount equal to the difference in the amount of application fee for the two categories.
While changing the category from obc to general.
Extra amount to be paid
=Application fee for general - Application fee for obc
= 1500 - 1400 = Rs 100.
