You can correct the details if the application is not submitted after filling it, if the application is already submitted you cannot correct the details in the application. There is no correction facility for NEET UG 2021 Maharashtra Counselling. If there are any details that needs to be corrected it should be done before submitting the application. These instructions are given in the Information Brochure in the official website

Yes, you can edit or correct your form through the correction window . You can edit it by going to the official NTA website .You need to login with your Registration Id and password Also, you will be charged based on the corrections you make . Everything apart from your mobile number , email id and Nationality can be changed . A point to note is that you can correct your errors only once .
The correction window for NEET 2021 was closed on 14 August 2021 .

Since you have correctly filled the names of your parents and other details hopefully it shouldn't be a problem if you forgot to add the middle name of your parents.
Further if a correction facility is available regarding the registration process then you can change the details.

The counselling conducted by MCC is for 15% AIQ . you can participate in it and can college in any of the states . Domicile is not an issue.
you caste must be in the central list released by the government of india in order to claim your seat through reservation.
Some of castes are there in the state list but not on the central list like mallicks in bihar so they can not apply using mallick certificate for AIQ counselling but for there state they can apply through reservations.

See if you had cancelled the seat allotted to you in round 1st of NEET UG counselling of Karnataka then you can definitely appear for round 2nd of counselling but chances of seat allotment depends upon your NEET UG 2021 score because seats are allotted only on the basis of NEET UG 2021 score.
You can check out previous year's cut-off of medical colleges of Karnataka and can get an idea of where you stand for allotment, whether you have chances or not to get seat in round 2nd :-

Really sorry to say but you can't register yourself in the second round of counselling directly if you haven't applied for it before. You'll have to apply in the counselling from starting if you wanna take part in that. But don't panic and try contacting the higher authorities of the counselling process through the contact number or email id that they have provided on their site and tell them about your problem and wait for their response they'll try as much as they can to solve your query so please stay calm and be patient.

You have not mentioned your Caste Category, so I'm considering it as General Category and providing information based on it.
Cut-offs depends on many factors they vary according and changes from year to year. Based on previous year's cut-offs it is difficult to get seat BAMS course, so you can try for Management quota seat in good Private BAMS Colleges in Karnataka.
You must have passed 10+2 or equivalent exam from a recognised Board or College. Your age must be minimum 17 years old on or before 31 st December in the year of admission.
