The subjects to be taken in class 11th highly depends on what you want to pursue in future, and what is your school providing as options, as different schools have different offering subjects.
There is entrepreneurship, history, geography, music, economics, and many, many other subjects. You should go for subjects like History, social sciences, economics, languages etc.
The stream you need to take must be directly connected with the subject you want be professor in. Talking about degrees and formal specifications, you need to have BA and MA in the subject. For further specifications you may need to have PHD too.
Other than that you must clear exams like NET(national eligibility test)and SLET(state level eligibility test). Clearing these will allow you to apply for a job in government or government associated institutions. However to get a job in government college you need to clear another exam that is UPSC which held every time a vacancy is created .
Most of these exams require advanced knowledge of your field along with knowledge of mental ability, GK and a language.
To become a government teacher, first of all you must get good percentage in your 10th, 12th and UG or PG as well as B.ed., Because if you want to become a government teacher, you have to write (Tet exam- Teacher Eligibility Test.) Or TRB. Tet exam for UG bachelors and TRB for PG bachelors. UG bachelors must need weightage. Weightage is based upon the 10th, 12 th and UG percentage. But TRB exam marks doesn't need weightage. Government teacher= (UG) Tet mark+ weightage. PG bachelor needs only the TRB mark percentage. B.ed is must to write Tet or TRB. To become a government teacher is a big task.

Irrespective of the chosen B.Sc curriculum and M.Sc curriculum you can pursue your PhD in any branches relevant to your work field without even adhering to the core course. For the PhD you can sit for different entrance exams of very prestigious institutions like Jadavpur University, IIT BHU, Jamia Milia Islamia Institute etc. When you select any other subject than your core, try to choose such a one which atleast has some minute connection with your B.Sc or M.Sc. That will help in your progress,

To become a professor after your class 12th is a long process , it takes time ,you have to be patient at while journey , firstly finsih your graduation ,from a reputed university if possible , then go for masters in that particular subject which is strong and them go for phD ,you have to qualify ugc net exam to become a professor !

Well, As you have said that you have cleared GATE , So you have chances to get PSU jobs as per their recruitment process and eligible vacancies .Also some PSUs releases vacancies for specifically selected papers and stream like Electrical, Mechanical , Civil etc.

See while you are applying for the Assistant Professor post, then the main thing that will be accounted your aptitude through the examination you give (College Service Commission/any examination for the post of Asst. Professor) & based on that only you will be called for Interview. Now in Interview, if one has good knowledge then all those marks & other things don't matter. What matters is the thesis & the knowledge the candidate have.
Now if the candidate is not upto the mark but if he/she have a good marks in PhD or in NET then sometimes the Interviewing Board can give some preference.
