If I appeared for JEE Main and Advanced Exams in 2020 got a Seat in some IIT/NIT Institute, but would like to go for other IIT/NIT in 2021 due to intrest in other Institutes. Shall I eligible for Admission to Other IIT/NIT Istitutes in 2021, as I accepted and Joined in Some IIT/NIT during 2020

You can definitely join another NIT or IIT if you join one this year.
But personally o would suggest you to either join college this year and move on in life or drop a year and then try to get better results as it's very hectic and stressful to keep a balance between jee preparing and college academics and can result in low marks in each field.
