If we observe last year(2020) cutoff for Civil engineering in IIT Roorkee then the closing rank for EWS was 1114 in round 6 of counseling.
Whereas in 2019, the closing rank for EWS category for this branch was 515 in 7th round of counseling.

Now coming back to your question, for a seat of Civil engineering in IIT Roorkee, you must keep your EWS rank somewhere around 500 or below it, then only you might get chance to grab it. Seats for civil engineering in EWS category is around 14 only so competition is little tight.

After B.Tech in Civil Engineering you are eligible for both M.Tech in agricultural engineering and M.Tech in environmental engineering. The only way to compare the two is with the job prospects they offer.
The average salary offered for an agricultural engineering with masters is - 1.5LPA to 3 LPA
And the jobs that will be offered - Research scientist, Agronomist, Breeder etc.
For an environmental engineer with masters
Average salary - 4 to 6 LPA
And the jobs - Research Assistant, Assistant Professor, Environmental Specialist, Technical Test Engineer, Bio Research Assistant, Project Assistant/Associate, Health & Safety Administrator, Environmental Engineer, Environmental Officer etc.

The cut off rank in 2020 to get admission to Civil Engineering in Manipal Institute of Technology, Manipal was 37282. With 104 marks your rank is expected to be above 20000 considering the previous year cut off you have good chances of getting seat in Civil Engineering in Manipal campus. The eligibility criteria for B.Tech civil engineering at NIT, Nagpur is
JEE main - last rank - 27159(general)
For merit based entry you need 50% marks aggregate in science stream for general category and 40% marks aggregate for SC/ST/OBC/PH Categories from a recognized board of education. Well, you can definitely pursue architecture course after graduation if that is what you wish to do in future. Also you can get into Project Management as well but I suggest you should work hard in your own stream assuming you have not lost your interest in the field. Don't ever fall into false claims by anyone that such and such field is very good or you can make more money in a particular branch. Your passion must drive you. There are many engineers who go for MBA and excel in that field as well while some stick to their streams and do M.TECH instead. Many civil engineers grab government jobs as well and there are some who prefer becoming IT professionals rather than willing to go to "construction sites"!
So what I would suggest is follow your passion, choose a field in which you are most comfortable working.
