I think you can go for graduation in almost any subject that interests you science, commerce or arts.
My suggestion would be to do Bachelors in Arts in any subject history, geography, sociology, political science, economics, public administration, etc.
According to me, graduation in polity or geography will turn out to be most helpful to you but again choose what interests you.

To become IAS officer you have to undergo UPSC Preliminary exam , UPSE Mains exam and Interview. In UPSE Preliminary Exam there are 2 papers, General Studies Paper-I & General Studies Paper-II which are object type. The preliminary exam marks are not considered for final ranking but need just for qualifying for UPSE (IAS) Mains exam.
UPSE (IAS) Mains exam there are 9 papers and it is Subjective exam. Part-A Compulsory Indian Language, Part-B English, Essay, General Studies papers I, II, III as well as IV, Optional papers I & II. So UPSE (IAS) Mains contains 2 Language Papers, 4 General Studies Papers, 1 Essay Paper and 2 Optional Papers over all 9 papers.

There is no such thing as best degree when it comes to appearing in UPSC exam, the reason being the eligibility criteria itself states candidates from any stream of graduation from a recognized university are eligible to apply, even final year students are also eligible , candidates need to attain 21 years as on 1st August of appearing year, now UPSC tends to be more humanities oriented in the sense if you look at the syllabus it's mostly comprised of humanities subject, so having a graduation in subjects like Political science, public administration, history,economics, geography etc help to a large extent ,because there is considerable overlap with general studies as well as optional subjects, now you can appear in UPSC with or without back up plan, so being a science student if you have aspirations in your field you can go ahead with this choice, the toppers of UPSC come from diverse backgrounds such as medicine, engineering, commerce etc, so as per your interest you can go ahead with whatever choice you have, remember that irrespective of the stream the diligence, single minded focus, dedication and perseverance remain the same for every UPSC aspirant.

There is no separate marking scheme for the students belonging to reserved category. But there is a reservation in the UPSC exam for the students belonging to reserved category in terms of the number of attempts, age relaxation, relaxation in IAS cutoff and the total number of seats. For example, the number of attempts for general category, EWS is 6 and forOBC is 9 and for sc/st students is unlimited upto age limit. Similarly, there is a huge difference in cutoff/closing ranks.

There is no such barrier of belonging to any specific stream when it comes to meeting the eligibility criteria of UPSC, if you pursue your career in the field of medicine, engineering, commerce you're as eligible as any other arts graduate, toppers in this exam come from diverse backgrounds, nevertheless if your aspiration is only to qualify UPSC, then having humanities backgrounds help a lot, as you're already acquainted with the subjects from 10+2 level, hence you can pursue graduation in subjects like political science, public administration, geography, economics, history, or even law is good option as it will also make you have a back-up plan in case you want to have, so in brief you can pursue graduation in any field as I said it's not compulsory to belong to specific stream, and why I say this, the reason being if you look at the toppers from the previous year they come from as diverse backgrounds as that of medicine, engineering, commerce etc, so this further states that for every aspirant the diligence, dedication, single-minded focus, and perseverance to qualify UPSC remains the same.
