You are permitted to do so. But there would be burden on you to study for the college in which you have admitted yourself and also for JEE 2021. You also would need to be paying fees at the college joined for this year.
If not wrong, when asked about the one year gap after your boards in your further career, the claiming of you being joined in one college and then in the other the next year wouldn't sound that good. It is also a very long process so as to complete the admission and also attain back the submitted certificates in the college as the college does not want to lose the candidate.
You can better be home and prepare for JEE 2021, claiming it to be a preparation break or take an admission this year and continue until you complete your graduation.

As per the guidelines,you can appear for JEE Mains twice a year in consecutive three years.So there won't be any problem if you appear for JEE 2021.
Regarding your current college,If you get a better college in 2021,you can definitely change it and take admission in First year,there won't be any issue.
