The Government of India did mention that Aadhar card is not mandatory for Educational purposes. Now it is not clear whether the Date of Birth that you mentioned matches that of the 10th marks. Because your 10th marks list is what is considered as the proof of your Date of Birth. Regarding the different date of borth part, you haven't mentioned whether the date of Birth mentioned in the application is wrong or the one mentioned in the Aadhar card. If it is the date of birth that is mentioned in the Aadhar card that is wrong then you may carry a different Id proof. But if the date of birth mentioned in the Application form is wrong, the same might come in the NEET admit card as well. And because you will not a valid Id proof to prove that, you might not be allowed to the exam hall. And all details will be thoroughly checked.

So if you really think that they shouldn't verify your documents then you are wrong , I'm also pass from theses procedure that's why i am saying these that, they verify all the documents properly.

You must attempt this year and seat in counselling procedure and show your all relevant documents their and provide DATE OF BIRTH CERTIFICATE and your 10th MARK SHEET which prove your DATE OF BIRTH and change your date of birth in your AADHAR CARD.
