The admission to the AIIMS are only on the basis of the All India Quota Counselling. I think you are applying for the state quota counselling as a result, the AIIMS Medical colleges are not appearing.

Yes, since you haven't selected counseling for OPEN seats, you wouldn't find AIIMS and JIPMER during the choice filling for counseling.
----- But Medical Counseling Committee, MCC has provided 'RESET' facility that could be used only once to make any corrections you made during Registration except the mistake in Category filling.
------- The RESET option can be used only to change the type of counselling i.e add or
delete different type of counselling and not to change the category.

There is a good probability to occur this problem. But it would not decrease rigorously. There will be decrease in the patient flow in JNM Hospital but those would be true only for the emergency or critical cases. But in general, the JNM Hospital will be at demand for the next 5 years at least until and unless the AIIMS is fully set up. So if you wish to take admission in JNM then you can take admission in it without any second thought.

NT-C is a state level reservation in Maharashtra which is not valid at central level/ AIIMS. At central level nt-c is under obc, and if your family income is less than 8 lakhs per annum then you belong to OBC NCL at Central level for which there is 27% reservation of seats in AIIMS and then you can get OBC NCL certificate made and then you will be able to avail reservation in AIIMS

In order to be able to appear in NEET you need to be eligible for it.To be eligible for neet one must be either appearing for 12th board examination or should have passed 12th board examination with physics, chemistry ,biology/biotechnology and English and must have got at least 50 % in aggregate of PCB i.e Physics, Chemistry and Biology /biotechnology in 12th examination if belongs to general category , or at least 40% in aggregate of PCB if belongs to Obc/ Sc /stcategory . Also to be eligible for neet one has to be at least 17 years old by 31st December of the year of appearing.

Firstly good wishes for your preparation of neet ,i hope your preparation will be going fine ,let's come to the point now ,if you want to get admission in aiims Delhi and you are from st category then you need to get at least 95-96 percentage and should have a rank at least under 20,000 which is too easy to get as compared to a general category students,because a general candidate has to score 99 percent to get a seat in aiims Delhi ,from here you can think how much Benefit you are getting of being a St candidate ,you should not loose this opportunity as it is best time for you to get your dream college,just workhard ,make a proper time ,neet just want time ,and time nothing more than that ,so be prepare and at least study 14 hours a day to achieve that goal.
