Your rank is 563 and According to the previous year cutoff of 2020, You can get admission in some AIIMS. This is so because the previous year cutoff ranks of AIIMS show that, the scheduled caste category opening rank for NEET is 87 and the closing rank is 1198 for admission in AIIMS. These are the rankings of AIIMS under all India counselling.
According to the AIIMS cut off the minimum percentile which scheduled caste candidate to score is 40 percentile.

There are chances of you to get the admission , with 563 marks. But the cut off varies every year so maybe you'll get the admission because cut off depends upon various numbers of factors such as the difficulty level of exams, no of candidates, etc. But the cut off for the reserved category is comparatively low than the cut off of unreserved category.

AIIMS Delhi does not provide BASLP ie Bachelor of Audiology and Speech-Language Pathology course.
It is a 4 year graduation course in India.
It is not listed in the course that AIIMS Delhi offers. So you have to contact authorities for more details.
Some of the other Colleges offering this course are
AIISH mysore, CMC vellore, PGIMER Chandigarh, GGSIPU New Delhi etc

As per the latest updates, admission in three colleges- Mahanadi institute of medical sciences, Sundargarh Medical College and Hospital and Jagannath Medical College will most likely start their admission with 100 seats each, this year. They all are government medical colleges. However, it is still not confirmed whether they will start their intake process for the session 2021.
